During my journey towards Veganism, I found it very hard to think of alternative ways of making cupcakes using animal friendly ingredients that still tasted good.
I remember spending hours searching the internet for vegan friendly recipes for cupcakes and there were simply hundreds of them to scroll through. I then landed on one which I felt seemed very easy to make …and so the journey began.
As I started following the recipe, I decided to add a few of my own touches along the way, such as scrapping the sift and just chucking everything in a bowl together and adding in natural food colouring to add a bit of life to it, to adding coconut milk instead of Soy / Almond milk and a few fun bits such as sprinkles and edibles at the end (depending on my audience).
I love making my Vegan cupcakes for friends and family and they always go down a treat, especially with my work colleagues, who simply devour them. It makes me feel very happy to see that people are enjoying them as much as I do.
